Make this soup and you will be a HERO!

VICKI ROGERS' BEST CHICKEN NOODLE SOUP

64 oz. chicken broth,(may need more) 1 store-bought roasted chicken,3 TBS. vegetable oil,1 large onion- chopped, 4 large carrots--chopped,1 tsp. dried thyme, 2 tbls. parsley, frozen peas, 1/2 bag egg noodles, salt & pepper. Bring broth to a simmer over medium heat. Separate chicken meat from skin & bones--reserve meat. Add skin & bones to the broth-reduce heat & simmer for 30 minutes. Strain broth through a colander and reserve. Add oil to pan & stir fry onions, carrots & celery-8-10 minutes. Add chicken, broth, spices,peas, and noodles and simmer until noodles are soft--about 30 mintues. ENJOY!

Alright...I really pushed it today! Worked out for 1/2 hour with weights with Caroline this morning at LAC....my friend Natalie is joining us--makes it more fun! Then, did 25 minutes on the exercise bike---kept my heartrate at 140-150 for the whole time...whew! THEN, walked 4 miles during lunch! Alright, now my challenge is to take it easy and not eat too much tonight for dinner...PORTION CONTROL!!!

Worked out with Caroline in a group class this morning--Ladies' express! It rocks...you work really hard for 30 minutes and then you're finished! Feel like I need more cardio, but just too cold to walk outside today with the wind chill in the low '20's....think I'll go back to the gym tomorrow morning and do weights and my bike routine....hope to see you at LAC!!! :-)

Worked out this morning with Caroline at LAC...WOW, I feel like I'm really getting tough!

Did lat pull downs, biceps, triceps, ab work in a super set, and tons more weights...then 25 mintues on the exercise bike--random hills, level 13, and kept heart rate at 140-150....

"Feelin' stronger every day..."! :-)

Worked out with Caroline at LAC yesterday morning...did 1/2 hour of intense weights and ab work...then did 1/2 hour on the bike....wow it really kicked my butt! Burned 250 calories doing the random hill workout...my legs felt like rubber when I was finished! Ya know, getting in shape and losing weight is 80% what we eat, and 20% working out...believe it or not...we all need to pay closer attention to waht we're eating! That's my goal for right now.....keep with the workouts and NO snacking at night!!!!

Well I don't know about you, but the snow's messing with my workout routine! I haven't been to the gym since last week...ok, I know it's my own fault, but when I can't workout with my personal trainer I'm SO MUCH less motivated to get in there!! OK...I'm going to the gym tomorrow morning no matter what! Unless the snow is TOO bad...:-(. Well, I did some weights and push-ups at home this morning, but it's just not the same as LAC! And we can't do our walks at lunch with all this snow, so I'm just going stir crazy...will let you know if I get to the gym...have you been there lately???

Well, due to the fact that it's been much too cold and SNOWY to walk, I have NOT been getting enough aerobic activity in during the week! SOOOO, tomorrow after my weight training workout with Caroline at LAC, I'm going to hop on the eliptical for 10 min, the treadmill for 10 min, then the bike for 10 min.....doing some interval training, to BURN THOSE CALORIES!!! Gotta do it, baby!

Well after a long week of sickness, I'm finally feeling well enough to get back to my workouts at LAC! YAY! I swear, I have become addicted to working out...which is WONDERFUL, because I now crave it!! Not back to my lunch time walks yet--just too cold, and I don't want to get sick again...so I'm going to have to do some cardio at the gym! This morning, we did lots of ab work, triceps and biceps, push-ups on the balance ball, military press, squats, and more....I'll be feeling it tomorrow!!!! Come on....get in shape with me!!

Hey, what are you doing for Superbowl? It's my dad's 78th birthday, so our family is taking him to see the Titanic Exhibit at Louisville Science Center, then to the Frazier History Museum for the WWII exhibit! Then we'll go back to our house for chili and the SUPERBOWL! GO COLTS! (I used to live in Indy, so I have to cheer for them!!) PLEASE be careful going home tonight...they say the snow is on the way!!

Well, I'm finally getting a LITTLE better from my bronchitis...I've not worked out this week since Monday, and it's really starting to get to me--I'm craving it! That's what happens when you get into a great workout routine, like I have with Caroline at LAC....you just get ADDICTED to it, and you feel lousy when you DON'T workout! I hope to take it easy this weekend, and hit it HARD again next Monday....hope to see YOU at the gym!!!
